Cheese Straws
Paula Deen’s views on butter are the things of which legends are made.
This receipe is no different, here are her cheese straws.
I bought self-rising flour just of this.
I do not own a sifter because it only does one thing. And Alton Brown says that’s silly. So I use a sieve.
I also bought the largest block of cheddar cheese I could find. It had to be cut in half before I used the food processor to shred it.
When she says “cream the cheese and butter” all I thought about was cookies. I also thought that this was going to take a while. I’m glad Persimmon was up to the challenge.
Then you had to coax the flour fix in. It has salt and cayenne pepper in it.
Now, there is the part where I deviated. I piped them out on a parchment lined backing sheet but I didn’t have a pastry tip large enough to handle this kind of constancy. So they came out not so much cheese straws, but cheese lumps.
But the plate was pretty.
